Frequently asked questions
What is yield?
Yield is the percentage of the raw weight that becomes usable product. If you buy 10 lb of fish and get 6.5 lb of fillet, the yield is 65%.
How do I calculate how much to buy?
Divide the output you need by the yield. For 5 lb of fillet at 65% yield, buy 5 divided by 0.65, which is about 7.7 lb.
